This is an easy recipe for chicken stir fry that’s made with chicken, broccoli and bell peppers. It’s cooked in a soy sauce and honey mixture for a sweet and delicious taste.
Ingredients
- 2 lbs boneless, skinless chicken breast, cubed
- salt & pepper to taste
- 2 tablespoons olive oil, divided
- 2 cups broccoli florets
- ½ red bell pepper, sliced
- ½ yellow bell pepper, sliced
- 3 garlic cloves, minced
For the sauce:
- ½ cup chicken broth
- ¼ cup of water
- ¼ cup of soy sauce
- ¼ cup honey
- 1 tablespoon corn starch
- ¼ tsp crushed red pepper flakes
Optional for garnish:
- 1 teaspoon sesame seeds
- 2 green onions
Instructions
- Slice the chicken into cubes (about 1” in size).
- In a small bowl, whisk together all of the ingredients for the sauce.
- In a large pan, heat 1 tbsp oil over medium heat. Add the chicken and cook for 5-7 minutes, until cooked through. Remove the chicken and set aside.
- Add 1 tbsp oil to the skillet. Add the broccoli and sliced bell pepper. Cook and stir until the vegetables are barely tender.
- Add the chicken to the pan along with the garlic. Cook for 1 minute more.
- Pour the sauce into the pan and bring it to a simmer. Turn the heat to low and let the pan simmer until the sauce thickens. Stir occasionally.
- Optionally, serve over rice and garnished with green onions and sesame seeds.
