Macaroni Salad
Ingredients
- 4 cups uncooked elbow macaroni
- ½ cup minced red onion
- 1 red bell pepper, finely diced
- 2 stalks celery, finely diced
- 2 hard-boiled eggs, finely diced
For the dressing
- 1 cup mayonnaise
- ⅛ cup distilled white vinegar
- ¼ cup sugar
- 2 ½ teaspoons sweet pickle relish
- ½ teaspoon garlic powder
- 2 ½ tablespoons dijon mustard
- 3 tablespoons sour cream
Instructions
1. Cook the macaroni according to the package
directions until al dente and barely tender. Strain and rinse under cold water. Set aside.
2. In a large bowl, mix the red onion, bell pepper,
celery, hard boiled eggs and macaroni.
3. In a medium bowl, make the dressing: stir
together the mayonnaise, vinegar, sugar, relish, garlic powder, mustard, and sour cream.
4. Pour the dressing over the macaroni mixture and
stir to combine. For the best flavor, cover and chill at least 1 hour before serving.
