For a refreshing and quick starter or side dish I recommend this Cucumber Salad with Ranch.
My memory can recall such events when I was a wee little tot. There are certain memories of me visiting both sets of grandparents for the summer weeks and getting to learn the ins and out to farm life. With one grandparent it was all about helping out with the chores which included helping with a large and I mean large summer garden and taking care of the chickens. The other grandparents were all about dominoes after lunch and shucking the corn when it was ready. It’s strange on what I remember with both sets, like the specific toys that I played with, food I ate and the hidden drawers of candy just for us kids when we visited.
Cucumber salad definitely goes back to both sets of my grandparents and each one made it differently. There are so many combinations of this recipe, so I decided to make my own spin for my kids. Yes, it includes ranch dressing because in fact I LOVE this stuff. Plus it’s a side dish that is so easy to make and is always a fan favorite.
I know that my grandparents would be shaking their heads to this recipe but believe me it is good. In fact I’m thinking about whipping up a batch so my grandfather can try it out. I’ve also made this Cucumber Dill Salad with vinegar and my husband makes a version with sour cream, but this recipe just might be my TOP Cucumber Salad dish.
Note: If you don’t own a spiralizer just cut cucumbers into thin pieces.
