Corn and Chickpea Dip

It’s nice to have a quick and easy dip recipe for any party or just a mid-afternoon snack. This corn and chickpea dip has minimal ingredients, minimal prep and then you are ready to head out the door.
How Do You Make Corn and Chickpea Dip?
You will need the following ingredients:
- corn
- chickpeas (May be labeled as garbanzo beans)
- greek yogurt
- mayonnaise
- old bay seasoning
- queso fresco
- cilantro
- lemon juice (fresh is the best)
What substitutions can be made?
- Greek yogurt and mayonnaise are interchangeable in this recipe. If you would like a tangier flavor profile, you can use more Greek yogurt and less mayonnaise (or vice versa). Also, make sure it is a plain greek yogurt and not flavored.
- Canned or fresh corn can be used in this recipe instead of frozen corn.
- A few substitutions for a white crumbling cheese are: cotija cheese or feta cheese
How do you serve this dip?
- This dip is best served chilled or at room temperature.
- Serve with tortilla chips, pita chips, crackers, or fresh vegetables.
- This can also be served as a side to dish to compliment a meal.
This corn and chickpea dip can be stored in an airtight container in the refrigerator for up three days.

Ingredients
- 15.5 oz can chickpeas, rinsed, drained and shells off
- 12 oz bag frozen corn, thawed
- ¼ cup Greek yogurt
- ¼ cup mayonnaise
- 6 oz queso fresco, crumbled
- 1 teaspoon Old Bay seasoning
- ½ lemon, squeezed
- ⅓ cup cilantro, chopped
Instructions
- Combine corn (thawed) and chickpeas (rinsed and drained) in a mixing bowl.
- Mix both the Greek yogurt and mayonnaise into the corn and chickpeas.
- Add the Old Bay seasoning, mix to combine.
- Add the crumbled queso fresco, mix to combine.
- Add the chopped cilantro and juice from ½ a lemon, mix to combine.
- Refrigerate for 30 minutes before serving.
