This wonderful Pimento Cheese Dip recipe is a simple southern dish that can be used as an appetizer or spread for sandwiches and burgers.
One of my favorite dips to pick up at the local store is Pimento Cheese Dip. It’s become a staple in our house when we break out the crackers, chips, meats, and cheese for a charcuterie board night. What’s even better is making it homemade with different types of cheese. For this recipe, I used Tillamook’s Colby Jack, Medium Cheddar Cheese, and their Pepper Jack Cheese.
1 1/2 cups grated medium cheddar cheese
1 cup grated pepper jack cheese
1/2 cup grated Colby jack cheese
4-ounce jar of diced pimentos, drained
3/4 cup mayonnaise
1/4 teaspoon garlic powder
2 tablespoons chopped green onions
a sprinkle of cayenne pepper
In a bowl, combine all of the ingredients and stir.
Cover with plastic wrap and place in the refrigerator for at least 20 minutes before serving.
*Note: The cheese brand that was used for this recipe is Tillamook and the mayonnaise is Blue Plate. I believe that good quality ingredients can make or break a recipe.
If you LOVE pimento cheese as I do, then I highly recommend this Green Chile Pimento Cheese Beef Slider recipe. Both of these recipes would be great when you have friends over.

Delicious, thanks so much!
Pimento cheese is a staple in our family. My mom and dad made it, my children love it and we are constantly trying minor modifications. But we always go back to the simple form of cheese, mayo, salt and pepper with wonderful pimentos.
