This wonderful Pimento Cheese Dip recipe is a simple southern dish that can be used as an appetizer or spread for sandwiches and burgers.
One of my favorite dips to pick up at the local store is Pimento Cheese Dip. It’s become a staple in our house when we break out the crackers, chips, meats, and cheese for a charcuterie board night. What’s even better is making it homemade with different types of cheese. For this recipe, I used Tillamook’s Colby Jack, Medium Cheddar Cheese, and their Pepper Jack Cheese.
1 1/2 cups grated medium cheddar cheese
1 cup grated pepper jack cheese
1/2 cup grated Colby jack cheese
4-ounce jar of diced pimentos, drained
3/4 cup mayonnaise
1/4 teaspoon garlic powder
2 tablespoons chopped green onions
a sprinkle of cayenne pepper
In a bowl, combine all of the ingredients and stir.
Cover with plastic wrap and place in the refrigerator for at least 20 minutes before serving.
*Note: The cheese brand that was used for this recipe is Tillamook and the mayonnaise is Blue Plate. I believe that good quality ingredients can make or break a recipe.
