The countdown for college football tailgating has officially begun. I have waited too long for a college game and I am ecstatic that I have season tickets this year. Not sure if its the boys in tight pants, our HOT coach, the actual sport or the free booze and food before the game starts. Actually I think it’s a combination of these things for me. Now if I could just get our coach back into tight pants.

Our game starts at 2:30 and I will be there ready to tailgate in black and red. I’m even considering bringing some 7 layer taco dip just so it looks like I helped out. You have to cover all your bases here folks.

If you are hosting your own tailgate party then I highly and I mean highly recommend treating everyone to these green chile pimento cheese beef sliders. I used whole hatch green chilies and paired them with a little original tabasco sauce. Nothing screams football more than amazing appetizers that bring a little bit of heat to it.

The upside to any amazing appetizer is the time to prepare it. These pimento beef sliders take less than 30 minutes to prepare. I promise that is the upside to any tailgate get together.

Green chile pimento cheese beef slider

Yield: 8 to 10 sliders

Prep Time: 20 minutes

Cook Time: 10 minutes

Total Time: 30 minutes

Ingredients

• 2 cups shredded sharp cheese
• 8 ounces cream cheese
• 1/2 cup mayonnaise
• 1/4 teaspoon garlic powder
• 1/4 teaspoon onion powder
• 4 ounce jar diced pimentos, drained
• 1 teaspoon tabasco sauce
• 1 whole hatch green chile, chopped
• pinch of salt and pepper
• 1.25 pounds 85% ground beef
• 1 teaspoon tabasco sauce
• 2 teaspoons worcestershire sauce
• 1/4 teaspoon salt
• 2 whole hatch green chiles, chopped
• whole wheat slider buns
• 2 large tomatoes, sliced

Instructions

Pimento cheese

1. Add all ingredients to a large bowl and mix well.  Place in refrigerator until ready to use.

Burger

1. Add all ingredients into a large bowl and mix using your hands.  Shape into small slider patties about 1/4 cup in size.
2. Heat a large skillet over medium heat.  Add 4-5 patties at a time flattening them into a disc shape.  Cook 3-4 minutes on each side.
3. Toast the buns and top each bun with a patty, tomato slice and large scoop of pimento cheese.
