Spinach and broccoli pesto spaghetti that will be a fan favorite with kids and adults.
One of Olivia’s favorite things to eat is noodles. She totally makes the slurpy sucking down noise as she puts them down. I decided to dress up her noodles and a little pesto to them. We usually make the traditional pesto but this time I was going to add some of her favorite vegetables to the mix. Her 14 month old birthday is tomorrow and I will be surprising her with pesto noodles. Olivia loves meat, vegetables and her new thing is smoothies. In fact I keep making a smoothie for myself but she insists that it is hers and hers only.
If your kids are picky eaters this is a great way to incorporate vegetables into their daily diet. This is also a great dish for adults as well. I’m a HUGE fan of pesto foods and I’m thinking of what might be next on my list.
If your kids don’t like sun-dried tomatoes feel free to substitue with cherry tomatoes.
Pesto
Add broccoli to a medium pot of boiling water. Cook until tender about 6-8 minutes. Remove from heat and drain.
Add broccoli with the rest of the pesto ingredients into a food processor. Blend until smooth.
Cook the pasta according to the package instructions. Drain the noodles and add the chicken, sun-dried tomatoes and pesto. Stir until everything is coated and then sprinkle with salt.

Good thing is that Livi loves broccoli but loves it even more when it is in pesto.
