This week has been one for the books. My husband had to leave for a three-day work conference and I was left to take care of two kids and an ever-growing baby bump. Two doctor appointments down, flag football practice, outdoor play, dinners, school, packed lunches and of course my own personal errands. I have to give it to single moms/dads who do this on a daily basis. It gets tough especially when either or both kids get irritable.
There’s no denying there were times they were cranky and so was I.
Luckily I was able to work Wednesday stress free from both kids at home. That meant I got busy in the kitchen and was able to put out three different recipes. One of those recipes was this delicious Slow Cooker Salsa Chicken Rice Bowls from Express Lane Cooking. Shawn is a great blogging friend and she just released her first cookbook, which can be bought at Amazon.
Express Lane Cooking boast flavorful recipes with a minimum amount of ingredients needed for each dish. That means less money at the grocery store while feeding a hungry family. This Slow Cooker Salsa Chicken came in hand when I needed something for dinner Wednesday night while also prepping away at other dishes. From start to finish it only took 3 ½ hours with hardly any clean up involved.
Now that’s a recipe for the books. Time to toast to the weekend finally being here and to my husband for getting back home late last night!
Season the chicken with salt and pepper and place at the bottom of your slow cooker. Pour the salsa and black beans over the top, then cook on low for 6 to 8 hours or on high for 3 to 4 hours.
Just before serving prepare the rice according to the package instructions, and use two forks to pull apart and shred the chicken. It should fall apart pretty easily. Serve on top of the white or brown rice with a sprinkle of cheddar cheese on top.
