After I write this post I will be packing for my weekend trip to DISNEY WORLD! I am beyond ecstatic because it has been 10 years since I was last there. The sad thing is that I will be traveling alone and leaving behind my sweet husband and precious little baby girl who is currently teething. There might be a tad bit of sucking up to my husband since he is staying behind this trip to take care of our baby. You may be asking why I am going to Disney World by myself but I am actually joining a TON of other food bloggers for the Food Blog Forum.
I remember looking at all the fabulous photos of this conference last year on twitter, facebook and instagram. Let’s just say that I was EXTREMELY jealous. I decided that this year was going to be the year that I made it to several conferences at that this was going to be one of them. Not going to lie, but I am a bit nervous since it’s my first one. I know some of the food blogger’s that are going but I’m actually going to be able to meet them in person and not just by chatting on twitter and facebook. This past weekend I ordered a camera lens from borrowed lenses for the next month, so get ready for some awesome photos.
Now on to this amazing quinoa dish. Quinoa is definitely growing on me and I believe that after having these pancakes I am now in love with everything quinoa has to offer. These are going to be my go-to side dish from now on. I told my husband that if you were to put a blind fold on and eat this pancake you would think it was tater tots instead of quinoa. Yep they taste that good! Now you will just have to try them for yourself.
In a medium size bowl combine all of the ingredients except for the olive oil. Use your hands to incorporate all of the ingredients.
Heat some olive oil in a saute pan over medium heat.
Spray a round biscuit or cookie cutter with nonstick spray.
Place the cutter into the saute pan. Place a couple of spoonfuls into the center and press down using the spoon.
Cook for 3 minutes and then remove the cutter from the saute pan. (You may need to press down the quinoa to make sure it stays on pan and doesn’t come off with the cutter.)
Using a big spatula flip the quinoa and cook for an additional 2-3 minutes.
Serve warm.

Have fun on your trip! I’m not sure I could travel on my own to something like that! I still have the middle school mindset of “what if I have to eat lunch alone??”. Something I need to get over, for sure!
These quinoa pancakes look TASTY! I was just thinkign this morning some sort of cheesey quinoa dish sounded amazing.
Oh I’m definitely nervous, anxious and excited about this trip. You always have that fear of being the LONER at things like this. I don’t eat at restaurants by myself either.
