I will be the first to admit that I am a huge sucker for fish recipes. In fact I would be completely fine if I alternated all my dinners between fish and steak. Oh man that would be the grand life. Unfortunately I don’t think my family will see those same visions as me.
One of my first fish posts for A Zesty Bite was this healthy Mediterranean tilapia dish. It’s loaded with powerful flavors that will make your taste-buds thank you each time you take a bite.

This tilapia recipe will also help you maintain that figure that you know all of us are wanting for the New Year.
In a large skillet melt the butter over medium heat. Add the onions and saute for 5 minutes. Pour in garlic and cook for an additional 2 minutes. Add wine, olives, capers, and tomatoes and simmer for 10 minutes.
Season each fillets with salt and pepper and add them to the center of the skillet with the vegetables. Cook the fillets for 6-8 minutes or until white and flaky; flip halfway through the cook time.
.Add 1/2 squeezed lemon to the top of fish when plating.

The top mixture will go perfectly with any type of fish. We actually had a little left over and used it the next day for fish tacos.
