Ingredients:
3 cups flour
3/4 cup sugar
1 1/2 tablespoons baking powder
3/4 teaspoon salt
2 large eggs, beaten
1 1/2 cups buttermilk
6 tablespoons unsalted butter, softened
1 1/2 teaspoons vanilla extract
1 1/2 cups blueberries, dried and lightly coated with flour
1 tablespoon sugar (for sprinkling)
Preparation:
Preheat oven to 350 degrees
In a mixing bowl add all the dry ingredients and mix
Make a small hole in the center and add all wet ingredients
Beat until all is wet but make sure you don’t over beat
Slowly start to fold the blueberries into the mix
Make sure that the blueberries are dry and well coated with flour so that it doesn’t moisten the dough while cooking
Line a muffin pan with 18 muffin cups and fill 3/4 full
Bake for 25 minutes or until golden brown
Stick a toothpick in the center to make sure it comes out clean or with moist crumbs
Not quite sure how you could resist at least a little nibble from one of those. They look incredible 🙂
this is perfect! I have two cartons of blueberries in my fridge that I have to do something with. I’ll have to try these. I love to make a huge batch of muffins and freeze them so they are fresh every day!

These look great. Magnolia bakery became famous because it featured in Sex In The City TV show. I always thought it very overrated.
Now these muffins may just change my view.

These muffins are gorgeous! I love blueberries and I love how the blueberries didn’t break apart and bleed inside the muffins! Great job for someone who doesn’t like to bake muffins….you can certainly bake them for me anytime! : )
