Growing up we didn’t eat much pasta. I have a dad who doesn’t like pasta, chocolate ice cream and frou-frou meals. Noodles aren’t his thing, chocolate ice cream tastes like dirt and he would rather stick to meat, vegetables and potatoes instead of sushi.
In return I never experienced much pasta besides the usual spaghetti and meatballs. I was the strange kid who never ate the sauce and just wanted the spaghetti plain jane.
Boy oh boy, I’ve definitely come a long way and I’ve even ventured out to make my own creamy alfredo sauce for this fettuccine with sausage and kale dish. This is another recipe where you cross your fingers and toes and pray that it works out because you have nothing else in the refrigerator and it’s too late to call for take-out.
I might even venture out to say that my dad would love this recipe and I might even get to try it out on him this week. This next weekend is the opening of deer season in Texas and my mom is coming to spend a couple of days with us while my dad goes hunting. Talk about some quality girl time and lots of pasta.
Now my next goal is to talk my father into liking chocolate ice cream. Ice cream is a weakness of mine and adding chocolate to it just makes it better – plain and simple.

In a skillet over low/medium heat add butter and cream. Whisk slowly and then add in heavy cream, milk, pepper, salt and cheese. Continue to mix until everything has melted and then reduce heat to low.
Boil water in a large pot. Add fettuccine noodles and cook until tender.
Add noodles, kale and cooked sausage to the creamy mixture. Stir until everything is well mixed and kale has wilted.
Serve with parmesan cheese on top.
