Preheat oven to 400 degrees
Bring 2 qts of water to boil and add salt (this is for cooking noodles)
In medium sauce pan cook bacon over medium heat until crisp and then chop up into pieces
Pour all but 1 tablespoon of fat out of pan and brown onions
Add garlic at the end for about 1 minute
Leave a little bit of a crunch to the onions as they will soften once baked in the oven
In 2 quart saucepan or Dutch oven, melt the butter over a low heat
Whisk in the flour after butter melts and cook for 5 minutes or until it turns a straw like color
Slowly add milk while mixing to keep the sauce from getting lumps
Cook for 5-6 mins until it starts to bubble and thicken
Stir in cream cheese until thoroughly mixed
Next, stir in cheddar cheese and seasonings; Turn off heat once mixed in
Pour in macaroni half way through making the sauce so it will be ready when sauce is done
Boil macaroni for about 2/3 the recommended time so it is still slightly chewy (we did 6 minutes)
The macaroni will soften up while it bakes in the oven
Drain the noodles and combine them with cheese sauce, onions and bacon and mix thoroughly
Pour mixture into 2 quart oven safe dish or individual baking dishes
Sprinkle with shredded cheese and paprika
Bake in oven for 20 minutes or until top layer of cheese has browned

You could try it in the crockpot but you would want to watch the noodles so that they don’t become mushy!

This is a keeper! I like the recipe, except for the unfortunate use of the word ‘crack’ in the title. I will call it “Crazy Good Mac & Cheese.”
I tried making this the other day – seriously, BEST MAC AND CHEESE EVER. it was amazing. I made it without bacon because I’m vegetarian, and it was still amazing. Only bad thing – now I c an never have another mac and cheese again because I know how good it can really taste 🙂

I made myself this recipe for dinner tonight and it is truly delicious. I know you said it isn’t exactly a healthy but I substituted some ingredients and shed nearly 140 cals per serving and over 30g of fat! Just little things like using light cream cheese, skim milk, turkey bacon, and light cheddar cheese really make a difference, and it still tastes so freakin’ delicious!

Looks great, but only 4 oz of macaroni for all that cheese? That is a quarter of a box? That will feed 4? Most mac and cheese recipes call for a lot more macaroni. Was that a misprint?
Yes it’s only 4 oz. of noodles covered in a lot of cheese. It’s been over a year since I made the dish but it was more like a side serving for 2-3 people. Definitely worth it though.
Wow!!! I just made this, and it was sooooo good. I omitted the bacon and used light cream cheese to save a few calories, and it was still the best mac n’ cheese I’ve ever had. Amazing!!!
