A week ago Shaun and I were in San Antonio for a friends wedding. The wedding and all the festivities took place on the Riverwalk. The day after the wedding I had made lunch reservations at a place called Boudros on the riverwalk. If you have ever heard of this place you know that you must get the guacamole for two when you eat there. Your waiter/waitress will roll out a small table and make the guacamole tableside so that you see what is going on with this delicious appetizer. They will even provide the recipe for you and you can also get it at the Boudros website. ENJOY!
Ingredients:
Juice of 1/4 of an orange
Juice of 1/2 a lime
1 avocado seeded and scooped out of skin
2 Tbs roasted and charred Roma tomatoes diced
1 small Serrano pepper roasted seeded and diced
1 Tbsp medium diced red onions
1 tsp chopped cilantro
sea salt to taste
Preparation:
In a small bowl squeeze the juice from the orange and lime
Add the avocado and chop it up coarsely with fork (do not mash)
Add the rest of the ingredients and mix up the guacamole
Mixture should remain chopped up
Serve with chips
What a delicious looking guacamole! I’m not sure that I could share it. I’m pretty sure that it would be a guacamole for one! San Antonio is one of my favorite places. Thanks for sharing!
This guac looks absolutely heavenly!! I’m a California girl who now lives in Scotland, and the thing I miss most about home is Mexican food, especially good guac and tortillas…this recipe will get used next time I’m home and near some proper produce!! love the photos and the recipes!!
