A couple of weeks ago I received a package from California Walnuts. They had sent me a huge bag of walnuts for us to try out.
I already knew about putting pecans in the freezer or refrigerator to keep them fresh but I never thought about doing it with the walnuts until they suggested it.
We have snacked on the walnuts and I have already made some delicious dishes using these California Walnuts. One of my favorites was the nutella walnut roll which is a must try. I had been planning on making this walnut crusted chicken but the time just got away from me. Shaun even helped me out by flattening the chicken.

Chicken coated in a walnut herb mixture and then baked.
Preheat oven to 375 degrees.
Pound the chicken with a rolling pin so that it’s about 1/4″ thick. Then dry with a paper towel.
In a food processor combine the walnut, red pepper, garlic and onion powder, parsley flakes, rosemary and salt. Mix until it becomes almost a fine mixture.
Sprinkle the chicken with salt on both sides and then pour a little dab of olive oil onto each piece. Using your fingers spread the olive oil over the top of the chicken.
Now coat the top of the chicken with the walnut mixture. Press it down on the chicken to ensure that it sticks well. Place it on a baking sheet and place into the oven. Bake for 20 minutes and then broil for 2 minutes to crisp the top of the walnut coating.

Walnut crusted chicken is something I’ve always wanted to try! There’s a restaurant around here that serves it and it’s amazing. Can’t wait to try to make it at home!
