There are so many great recipes that I have shared over the past 3 years. I’m starting to revisit some of my favorites and re-do the photos. Old photos will be shown at the bottom of the page to document just how far I have come in my own photography skills. (Apparently I had little to say back then}
This is basically a play on from a Caprese salad. I received the recipe from a family friend this summer and it just goes perfect as a side.

Tomato & Mozzarella Salad

Ingredients
- 2 cups Cherry Tomatoes (keep whole or cut in half)
- 1 cup Fresh Mozzarella Cheese (cherry size)
- 2 Tablespoons of capers
- 1/2 cup diced purple onion
- 2 teaspoons of basil
- 3/4 cup of “Ken’s” Balsamic and basil vinaigrette
- salt and pepper to taste
Instructions
Mix all ingredients and set in refrigerator for at least 30 mins to marinate and coat everything.

I love just about anything involving mozzarella. These kinds of salads are also great served with some nice Italian bread to dip into the dressing.

I made this over the weekend for my family’s Fourth of July party and it was ABSOLUTELY amazing!! The only thing I changed was to grab pre-marinated mozzarella balls, as they were the only ones I could find. It turned out SO beautifully, especially with some heirloom cherry tomatoes of all different colors. Thanks for such a simple and stunning (oh, and absolutely delicious) recipe!
