It is Hot! Like go outside and you immediately start to sweat and your makeup is running off and your clothes are clinging to your body and you just want to scream I need AIR. I might be exaggerating this just a bit but I’m apparently not coping well with this type of weather.
I woke up Saturday and decided to take Olivia on a little stroll through our neighborhood. In my mind it shouldn’t be quite that hot out because it was 9am in the morning. WRONG! It was blazing hot outside and it probably didn’t help that I was wearing black pants to hide my pale looking legs. As I was rounding the corner in the last home stretch I wanted to run home so badly with the stroller but knew that if I ran to the AC I would surely pass out.
I’ve always been a big fan of water and after that gruesome unpleasant walk I drank about 3 full glasses and made sure I loaded Olivia up as well. For lunch I was thinking about grilling out for the two of us but that idea was quickly shot down with the rising temperatures. Instead I decided to whip up this chicken broccoli slaw with some items I had in the refrigerator. Best of all it was a COLD dish that I thoroughly enjoyed in my AC.
Remove the skin from the chicken and shred it with your hands and place in a bowl. Add the slaw, cilantro sauce, tomatoes and pecans. Mix and if you want more dressing add the last 1/4 cup.
Season with salt and pepper.
*Eat alone, on top of greens or in a sandwich.*

Oooohh! Loving this new slaw idea!
It was so good and refreshing. A twist between regular cole slaw and chicken salad.
What a fun slaw idea! This looks delicious!
Thanks Tieghan.
It’s inhumane to be that hot out that early in the morning!! I need a bucket of this – NOW, I have to cool down STAT.
Definitely inhumane. It was just BRUTAL.
You seriously just married 2 of my favorite foods.
It’s a good marriage too.
Believe it or not, it was balls hot here in Denver last week! I wanted to cry!! I’m thinking the only thing that could cure my heat blues would be this chicken broccoli slaw! Delish.
Do you have a recipe for the creamy cilantro dressing?
Tina,
I used a store bought dressing here in Texas. http://www.harriets-original.com/TexasCilantro.htm
You could use any type of creamy dressing that resembles ranch.
Some days I’m glad I live up here in Wisconsin – it has been in the 70’s all week! 🙂 Sorry! I am missing the feeling of “summer” though – looking forward to getting some heat in a couple of weeks down there! This dish looks awesome – was wondering about the cilantro dressing as well – store bought?
Hey,
Yes, it’s pretty brutal down here and you better get ready to sweat like crazy. The dressing was store bought and here is the link.

You could use any type of creamy dressing that resembles ranch.
This looks wonderful! Such a great lunch! And it’s super hot here too, I’m sweltering!
Ughh I’m ready for Winter.
This sounds amazing and i love how simple it is. I’m such a fan of broccoli slaw!
Broccoli slaw is amazing and you can do so much with it.
What a great meal for all of those nights that it is too hot to cook!
Thanks Julie! It was definitely to hot to cook anything this past Saturday.
A slaw with chicken! I LOVE it. This looks so delicious 🙂
This slaw looks tasty. You’re not the only pal gal. I’m with you. I burn…bad! I slather on the block and stay pale all summer long.
I love broccoli slaw! Great idea to add chicken to it to make it a main dish!
