Yes, I know I have been MIA this week. I’ve had several holiday parties but don’t worry I have lots of upcoming recipes to share with you.
Tonight, is a recipe that I found on Pinterest of course. Potatoes in a stack covered in margarine and baked in a muffin pan. YES, please! They can go perfect as a side or a snack. Best part is that you might even have the ingredients already at your house! ENJOY!
Ingredients:
1 russet potato
2 garlic cloves, minced
2 Tbsp margarine
1 sprig of thyme
salt and pepper
Preparation:
Preheat oven to 350 degrees
Spray a muffin pan with cooking spray
Cut up a potato making really thin slices or use a mandolin
In a small dish melt margarine then add garlic and thyme
Lay a slice of potato into the muffin pan and then brush the margarine mixture on top
Repeat the above step until the muffin pan is filled
Cook for 40-45 minutes and then broil for 2 minutes
Let them stand for about 3-4 minutes and then get a spoon or fork and scoop out the potatoes
*If the potato slices don’t fit in the muffin pan just cut little pieces off so that they fit*
