    Just wondering if the fresh spinach makes the pastry soggy as it cooks down? Or is the oven temp high enough to absorb the moisture? Sounds delicious!

      Hi Laura,

      Thanks for asking this question. The fresh spinach did not make the puff pastry soggy at all when it cooked. Also, with the temperature at 400 degrees instead of 350 it helps get a nice golden crust.

    Those pancetta and spinach pinwheels look incredible — I love recipes that feel fancy but are secretly super easy to make.
