For the past couple of months I’ve talked about my trip or “work conference” that would be taking place on a cruise. Most of you know by now from my plethora of beach photos on instagram that I’m on my trip.
Yes, I’m enjoying 80-degree weather and sipping away on fruity drinks with the cute little umbrella.
What you didn’t know was that I was traveling with bloggers that I hadn’t met before. Yes, my roommate Laura and I had talked before, but meeting in real life just hadn’t happened. Some were shocked knowing that I was going alone but after my 5th conference I’m kind of used to meeting new people and just making the most of it.
There are definitely things that I will miss on cruise….you get pampered all the time with great room cleaning service (means I don’t have to clean), good food, unlimited amount of shows to attend and you come to expect that same service when you get off the boat. What no appetizers, bread, entrées and dessert for free? Not to mention that you can order even more food if you happen to still be hungry. Yes, in fact I did order two appetizers the other night for dinner just because I was intrigued with one and REALLY wanted the other one.
When you put a lot of bloggers or food bloggers on a ship surrounded by endless amounts of food, you just know that we are going to have to taste test everything in sight. It’s just what we do…. Judge food and try it out. Oh and I can’t forget all of the picture taking on our phones.
All this talk about food has me wanting to share this amazing, yet easy, pancetta and spinach pinwheels. The Superbowl is coming or you might need to host a baby/wedding shower this year and need a super fast pinwheel recipe. This is the one for you ladies and gentlemen.
It will also come in handy when you get off the ship and come home to expect the appetizer, main meal and dessert options. At least I’ve got you covered for the appetizer.

Preheat oven to 400 degrees F.
Lay puff pastry out on a flat surface. Brush the top with egg wash and then lay pancetta on top. Then add the spinach and cream cheese. Starting at one end roll up the puff pastry. Slice into the dough creating 1/2 inch slices.
Place slices onto a non-stick baking sheet and top each one with egg wash. Bake in the oven for 17-20 minutes or until golden brown.

It is fresh spinach and the brand of puff pastry that I used was the Pepperidge farm Puff Pastry sheets.

Just wondering if the fresh spinach makes the pastry soggy as it cooks down? Or is the oven temp high enough to absorb the moisture? Sounds delicious!

Thanks for asking this question. The fresh spinach did not make the puff pastry soggy at all when it cooked. Also, with the temperature at 400 degrees instead of 350 it helps get a nice golden crust.
