A couple of weekends ago, we ate at a popular chain restaurant in Salt Lake City, Utah. After a canceled flight and spending half my morning talking with the airlines, we decided to get our grub on at this chain restaurant. The menu of this restaurant is literally a book with front and back pages. I’m not sure why I actually go page by page when I know what I want before I even sit down at the table. I always get the chicken salad sandwich with a half salad and soup. Not sure why this is the lunch combo when it literally can feed 2-3 people. However, I was so hungry on this trip that I decided to check out the small bites on the menu. Loaded tater tots caught my attention; I proceeded to tell myself that I had to have them.
One week later and I am still thinking about those loaded tots. So much that I decided to make them my own way to satisfy any cravings that may occur while at home. Loaded potato bites were born. The best part is that these babies only have 5 ingredients in them.
Simply potatoes are usually the potatoes that we have for our weekend breakfasts. They are simply fail-proof and will forever be our go-to choice for hash browns. I decided to skip the hassle of shredding/grating our own potatoes and used Simply Potatoes Hash browns for my loaded potato bites.
I needed a binder to help keep these bites stay together and that is where the egg came in hand. Did you know that Simply Potatoes are fresh potatoes that are never frozen and they only use fresh ingredients! Not to mention that you can get a whole bag for around $2 bucks.
These loaded potato bites will forever change the way you look at a loaded baked potato. It will never be the same….

Preheat oven to 425 degrees.
Cook or bake the bacon and then set aside on paper towels to soak up any remaining grease. After it has soaked up chop into small pieces.
Pour hash browns in a large bowl and stir in the egg, sour cream, salt, cheese, and bacon.
Using a 2 teaspoon scoop make balls and place on a silicone mat or non-stick foil.
Bake for 25 minutes. Serve warm.

Wow I love potatoes. Fortunately or Unfortunately depending on what my scale told me that morning, this recipe has both bacon and cheese. Yum. No peeling of the potatoes either. Easy and different. I think we have a winner here.
Ummm easier said than done? I guess I shouldve let my hashbrowns thaw 1st? Because now all my other ingredients have frozen on contact and it is impossible to stir….

One of our local restaurants has an appetizer called “Pub Tots” that I order every time (and I do mean EVERT TIME) we go. They are to die for and my favorite appetizer. However, they are deep fried and I hate to deep fry. Yesterday I came across your recipe and I ran right out and bought all the ingredients to make. I made them today and they were delicious. The Pub Tots have green onions in them. My husband is not a fan of onions so I substituted dried chives. The nest time I make them (and there will be a next time!) I am going to add a little more bacon and use Bob Evans Hash Brown Potatoes with Onion and Parsley. That will give me the onion flavor I missed. Spot on recipe Megan. Loved it and loved it even better because it is baked. Served them with Chipolte Ranch Dressing. Thank you for sharing and creating.
This recipe was delicious. I followed the recipe to a tee! Reread it many times. You commented you should get 10-12 balls. Whaaat? Mine were almost twice the size you suggested and I got 21 balls. Things just didn’t add up. I had to add a 2nd egg to try to hold the balls together and that didn’t work well either. If I try this recipe again, I’ll try adding a little flour or bread crumbs. Otherwise I just created little haystacks. It’s so tasty I want to make something work.
Didn’t work for me. The recipe didn’t state that the potatoes needed to be thawed, but the frozen potatoes didn’t hold together and the egg froze in the. I tire. I had to throw out the ingredients and had no appetizer to serve.
Sorry that the recipe didn’t work out for you. The brand that I have in the recipe is for thaw potatoes, but I will make a note in the recipe.
Can I use par boil potatoes and grate them for this recipe. I like my food fresh not frozen.
I made these for supper tonight and both my husband and I loved them, however… I could only find the Simply Potatoes that were cubed has browns with onion, not the O’Brien potatoes. It really is necessary to use shredded has brown potatoes so they form correctly and stay together while cooking. It occurred to me that this is very much like a toasty Funeral Potato ball. Love the taste! I’ll be making them again with shredded hash browns even if I have to add chopped peppers and onions myself! Great recipe. Thanks for sharing it.
I had trouble with this recipe, and I’m not sure why. When I started putting the bites onto my baking sheet, there was a pool of liquid in the bottom of my bowl, and each bite sat in a pool of liquid, and they were too flat. Could that be because I whisked the eggs, and then whisked in the sour cream before mixing the whole recipe together?
I also would add more salt.
I like adding chives and sometimes roasted hatchet green chilies. These bites are a family’s favorite for sure!
Made this recipe tonight using a container of Idaho spuds from the carton. They came out great. Will definitely make again and try adding chives.
I couldn’t make this recipe work as written. The mixture wouldn’t hold together. I doubled the egg and sour cream and that was better. I also added chives and salt and pepper. I made the balls bigger (about 1 – 1 1/2 tbsp) and ended up with 30 of them.
