Now I’m sharing my “new” go to dessert for that mid-afternoon craving… Keto Chocolate Chip Cookies with pecans.
Learning to bake with new products that fit the Keto lifestyle requires patience and the urge to try and try again. I finally nailed it with these Keto Chocolate Chip Cookies. They are adapted from All Day I Dream About Food’s Keto Chocolate Chip Cookies. I had originally been using Erythritol but the cookies came back with a strong cooling effect and they didn’t taste right. It also could have been that I ran out of baking powder and quickly made my own for the first batch. After swapping out the Erythritol for Swerve and getting the rest of the ingredients in order this second batch came out just right.
Almost all my cookie recipes include espresso powder to bring out the chocolate flavors in the cookies. There is no way that I could exclude them from these keto cookies.

These cookies are amazing!! I didn’t have espresso, so I did 1tsp of instant coffee. Definitely in my regular dessert rotation now!
What brand of dark chocolate morsels do you use? Regular Tollhouse are pretty sweet? I’m new to this keto diet and am still trying to wrap my head around the do’s and don’ts.

The cookies are amazing, actually to good! I used cocoa nibs trying to stay super low carb. I will say I did the math and my batch made 20 cookies. I calculated 3680 calories for the entire batch, so like just under 200 calories a cookie. They are so good it’s hard not to eat to many. These will be an occasional sweet treat! Thanks for sharing.
