Homemade Beef Spring Rolls for a fun appetizer or main meal.
This past weekend we packed up our bags and headed out west to Ruidoso, New Mexico for a family getaway. It’s such a short distance from where we live and there is nothing like sipping a cup of hot coffee on the front porch on the mountain side. The fresh air, the birds chirping away and the wildlife just walking distances away from the cabin. It’s in those moments when life seems so simple. The kids wanting to be outdoors and the adults getting a second to step away from work.
The kids put down their ipads and turned off the TV and passed the time throwing rocks on the road. After naptime, we went walking on the trails that are located just down the road from where we were staying. And we also enjoyed some relaxing time just sitting on the outdoor deck taking in the clean, crisp air with only birds chirping in the distance. Oh, how I love the mountains in the fall season.
Unfortunately, we had to make our way back home Monday evening. I’m already planning our next trip, but in the meantime it’s back to cooking and baking in the kitchen. While I planned out our next grocery store run, I made you these simple Homemade Beef Spring Rolls. They would be great as an appetizer or a healthy main entree. These spring rolls are also customizable and you can add or take away ingredients to your own liking. I added a honey mustard sauce and some hummus each time I ate these for lunch. I recommend eating them right away as the rice paper tends to harden after sitting in the refrigerator for very long.
Prepare rice papers according to package directions.
Lay down rice paper and top with a slice of beef, apple, carrots, cabbage, arugula and a couple slices of avocado. Then add some sauce before rolling it up. Repeat until all rice papers are done.
