I have a slight confession to make today……..
I’ve never had figs before and this past weekend was my first time to try them out. Shaun and I decided to have some friends over for a grilling event. More on that later…. I’ve been meaning to try out figs and finally decided that I was going to make a baked fig appetizer for everyone. Now when people come over to my house I get nervous because first off they associate a food blogger as having fancy meals and no failed recipes.
Note: Most meals cooked or tried out on this blog are for the average cook or baker.
When I do have friends or family over for dinner I usually tend to stick with fool proof meals and something that I have tried before. These figs were a different story since Shaun and I had never tried them, let alone make a recipe out of them. I wanted to keep the figs as the main focus and just add some cheese and pancetta to them. Simple and fast was my main concern since I was putting out other dishes for our grilling event. A couple of hours before our guests arrived I baked a couple of these bad boys to try them out and of course photograph them. I didn’t want to keep our guests hungry while I was taking photos around the table.

Preheat oven to 350 degrees.
Heat a small skillet. Add the pancetta to the pan and cook on medium heat for 5 minutes. Remove from heat and set aside for cool down.
Once the pancetta has cooled down add the cheese crumbles and mix. Using a knife create an “X” on the top of each fig. Make sure that you only slice through about half way down. Spoon a little of the mixture into the center of each fig. Place on a baking sheet and cook for 8 minutes.

My favorite way to eat figs is… grill baguette slices, spread with fresh Chevre, toped with arugula that has been tossed with a bit of good olive oil , honey and balsamic, sprinkle with fresh cracked black pepper then layer couple of fresh fig slices and top all with crisped prosuitto . You won’t have any by the time your guests arrive – Addictive.
We had a fig tree growing up but we always ate them fresh never fancy or stuffed or grilled. But now I love them in all sorts of creations and this one looks amazing!
Ohh man what I would do for a fig tree in my backyard. We had a plum and peach tree.

Yummmmm! I haven’t had any figs yet this year but I want to change that ASAP with these babies.

Take the crumbled Gorgonzola cheese and stuff each fig with a generous amount. Use your fingers to gently pry the figs open and stuff them with the cheese.
