Pasta Ingredients:
5 lg eggs
2 3/4 cups of 00 flour
1 Tablespoon of olive oil
1 Teaspoon salt
Pasta Preparation:
Combine all ingredients in mixer bowl with flat beater and mix until it forms into a ball – (DO NOT ADD WATER)
Switch to dough hook and mix for another minute
Flour the kitchen counter and remove dough from bowl and start to knead for about 5 minutes
Stick finger in dough and if the hole closes up the dough is ready
Cover tightly with saran wrap for 30 minutes and set aside
After 30 minutes remove wrap and cut into four pieces
Form each piece into a rectangle about as wide as the roller; make sure there is flour on counter so that the dough never sticks together
Attach the pasta roller to kitchen aid mixer on setting one and run thru twice; keep adding the dough until you end up on setting 5
The dough will end up pretty thin to where it is almost transparent; if you have the fettuccine attachment add it and run the dough thru it and place to the side for it to dry
After allowing it to dry for 15 minutes add to freezer for 30 minutes and then remove
When you are ready to cook add the pasta to salted boiling water and cook for 3-4 minutes
*If you dont have a mixer for the above ingredients place the flour on the counter and make a center hole and add the remaining ingredients in the center and start to stir with fingers incorporating the flour slowly and then knead like above and then wrap it up; after letting it sit start to roll the dough until it gets paper thing and then cut it length wise into strips and freeze like above*
Vegetable Ingredients:
1/2 cup Tomatoes
1/4 cup Red Onions
1/3 cup Oyster mushrooms
1 cup regular mushrooms sliced
1 tsp minced garlic
Vegetable Preparation:
In medium sauce pan on high heat add some olive oil; when pan is really hot move to low-med heat
Add onions, mushrooms and when they are brown add the garlic
Sauce Ingredients:
3 oz. Heavy Whipping Cream
4 Tablespoons Butter (room temperature)
A sprig of chopped Rosemary
Sauce Preparation:
In small sauce pan add whipping cream on med – high heat
Cook for about 5 minutes; add rosemary
Start to add butter 1 tbsp at a time making sure it’s melted
Add about two pinches of salt
Noodle Preparation:
In large pot add hot water to high heat
Add 1/3 cup of salt to water and let it boil
Add the fresh noodles and they will be ready in about 3-4 minutes
Drain the noodles; add to large bowl and stir in the vegetables and some of the sauce
Sprinkle with grated piave cheese and tomatoes
Nice job on the fresh pasta…Sauce sounds good.
