Why I Make My Breakfast Casserole with Hash Browns
Potatoes are a healthy, whole-food addition to this breakfast casserole. They’re also gluten-free, which makes them perfect when you have a group of family members or friends who may need that option.
While I use shredded hash browns in this recipe, you can use cubed or chopped potatoes (fresh or frozen) as a substitute if needed.
Substitutions & Tips for This Breakfast Casserole Recipe
You can use any breakfast meat you love or a combination of all your favorites!
If you would like to make this breakfast casserole meatless, you can substitute a vegetarian option for the meat.
If you like seasoned hash browns, you can add salt, pepper, or your favorite seasoning combo on top of the hash browns (before you add the other ingredients).
Overnight option: Cook this recipe on low for 7-8 hours if you want to cook it overnight and eat your breakfast casserole first thing in the morning.
Sneaky veggie tip: if you have picky eaters that might balk at the peppers in the recipe, try using just yellow peppers (they’ll blend in perfectly!).
Easy Crockpot Breakfast Casserole with Hash Browns
Yield: 8 servings
Prep Time: 20 minutes
Cook Time: 8 hours
Total Time: 8 hours20 minutes
Ingredients
12 large eggs
1 cup milk
1 bag (28-32 oz) frozen shredded hash browns, slightly thawed
1 pound cooked breakfast sausage, bacon or ham - or a combination
1 cup diced red, orange, yellow or green peppers
3-4 green onions, sliced
2 cups shredded cheese - cheddar or Colby-jack
2 teaspoons Dijon mustard
1 teaspoon salt
½ teaspoon black pepper
Cooking Spray
Instructions
Cook sausage, bacon or ham. Set aside.
Spray inside of crockpot with non-stick cooking spray
Whisk together eggs, milk, Dijon mustard, salt, and pepper until combined well. Set aside.
Add hash browns to the bottom of the crockpot
On top of hash browns, layer half of the meat, peppers, onions and 1 cup cheese
Repeat layers
Pour egg mixture over ingredients
Cook on low 7-8 hours or high for 3-4 hours
Serve immediately
Store leftovers in the refrigerator for up to 4 days
