Have you planted your garden already? We just bought our herbs, seeds and plants yesterday from Home Depot. A step-by-step tutorial will be up shortly about what we used and built just in case you are behind like us. Usually I already have fresh vegetables growing if I haven’t killed them already. When we were living in Houston the insects and heat basically killed them off before we could enjoy them. I’m destined that this garden in West Texas will survive and feed my family.
I’m keeping my fingers crossed that in the next couple of weeks we will have an abundant supply of tomatoes, onions, green beans, squash, zucchini and array of fresh herbs at my disposal.
Pompeian is celebrating National Salad & Vinegar Month and I thought this fresh burrata fruit salad with simple dressing was the perfect way to end the month. I got my fill of unhealthy foods this past weekend so this salad came at a perfect time. Now I can’t wait to use fresh tomatoes in the next couple of weeks. Also, this got me thinking about going back to the store to get an avocado tree. The cheese for this dish is called burrata cheese and it is very similar to mozzarella. It is just a little bit creamier and its a new favorite among foodies.
When I make a homemade dressing at home I usually reach for the balsamic vinegar every single time. I wanted to branch out a bit with this dressing and add red wine vinegar instead. Did you know that Pompeian actually has 7 different wine vinegars?!
Now its back to the garden planting for me, so that I can have a fresh salad soon.

First, I love the new site!!!! So chic!! Second, we’re no where near having our garden ready…it’s so bare, it’s embarrassing. That’s my mission this weekend. But this salad, so easy, so light, so summer, so needs to be in my belly!
This is one gorgeous salad! I wish I had one for breakfast!
What a light, colorful salad! We planted our garden a few weeks ago. I can’t wait for our fresh cherry tomatoes! They are one of the best parts of summer!
Looks like a delicious way to celebrate seasonal produce – yum!
Burrata for breakfast? Also, can’t wait to see the garden. I’m jealous!
This sounds SO easy and delicious!
We just planted our tomato plants a few weeks ago, we made the mistake last year of only doing a few tomato plants, and they only produced enough tomatoes for about five BLT’s. Ha! So this year we planted PLENTY, crossing our fingers we get oodles of tomatoes this year!! This salad would be a perfect way to use them, so fresh, and I love the burrata cheese!
Umm?? yes please!! This is so pretty!
Perfect summer salad. Easy and delish and it looks so fresh with all the different colors. 🙂
Beautiful salad! It looks so good!
Mmm what a great salad!! I love the fruit and veggie blend. WINNER!
