Raise your hand if you love casseroles.
Breakfast casseroles as a matter of fact. Ones that you can whip up the night before and pop them in the oven the next morning for ease. I typically like to make breakfast casseroles for the weekend.
Why?
I value my sleep so if I can sleep in an extra 45 minutes or an hour I’m going to do it. Nothing beats sleeping in late and then waking up to a hot cup of coffee with nothing else on your mind, especially making breakfast.
To be completely honest our household runs on the typical all American breakfast on the weekends. So when do I actually make casseroles if I love them so much?
If I have people coming to visit I like to make breakfast casseroles, so we can spend more time chit chatting about past times instead of getting hot and steamy standing near the oven. This ultimate breakfast casserole will also come in hand if you are on vacation staying at a place with a kitchen. A quick breakfast plus leftovers for the following meal or day would definitely make me happy.
This casserole is loaded with sausage, fresh vegetables, cheese, hash browns and a little sweetness added to it. Thats right I added International Delight french vanilla creamer to the recipe and it is the perfect addition.
Today my hubby is taking off on a business trip for the next four days. It will just be me and the little one by ourselves trying to pass the time. This upcoming Wednesday is also our 3-year anniversary and the first one where we will be apart. That’s right I’ll be at home baking and cooking away in the kitchen while he is floating the river on some conference escapade. Doesn’t seem fair does it but I can’t complain too much since he brings home the bacon. Well maybe I bring home the bacon but he pays for it.
I can now wallow my tears in this breakfast casserole while sipping on a hot cup of coffee. Thank goodness I made this before hand so I can sleep in too. No alarm clock waking me up so “someone” can head into work. Before I get into too much trouble about us not being together for our anniversary I have to let you know that we did take a pre-anniversary trip to Santa Fe a week ago. There will be more about that this coming Wednesday……
Preheat oven to 375 degrees F.
In a large saute pan brown meat and then add in onion, bell pepper and garlic. Sauté for an additional 5 minutes. Add in the jalapeño, hash browns, butter and salt. Mix everything together and cook on low/medium for 5 minutes. Pour into a 13 X 9 inch casserole dish.
In a bowl whisk together the eggs, milk and creamer. Then slowly mix in the cheese. Pour over the meat and vegetable mixture. Bake in the oven uncovered for 40 minutes or until slightly brown on top.
Serve with smashed avocado on top.

I love this casserole but I used bacon instead of sausage and in the bottom of the tray I put some croissant from Pillsbury to add a little body when served.
