There are nights when I like to pick up the kids from school and come home to a nice dinner already made for our family. Who am I kidding? I work from home and my days usually consist of making food around the clock for everyone. If I want dinner made, well then I need to get off my high horse and get it done. Some meals take an hour or more to complete while others only need 30 minutes or less. Sometimes the dinners that get thrown together so quickly or the ones that my family devours the most and quickly becomes our favorites on a monthly basis.
At least once a week our family will typically eat International favorites like Mexican food, pizza and indulge into some pasta. This past week I busted out some ingredients for this white wine sauce and let it simmer over the stove for at least an hour and then brought a pot of water to boil for this Tagliatelle pasta. A simple, yet satisfying meal that everyone loved. I always hear from other people how terrified they are to cook because of how difficult some recipes can be when cooking for a family. This is a simple recipe that can definitely be made by anyone. We sat down as a family with wine on the table, water for the kids, salad and garlic bread straight out of the oven to be paired with this White Wine Pasta with Tomato Sauce. It was even enough to cover dinner for one night and lunch the next day.
This Italian pasta night would have been a great date night at home with the wine pairing. Maybe next time we can get a sitter for the kids. Save this tasty dish for your next pasta night with your loved ones.
Add tomatoes to a blender and pulse until smooth consistency.
Pour olive oil into a skillet over medium heat. Add onion and saute for 4 minutes. Stir in the garlic, 1/4 cup of white wine and oregano and bring heat down to low. Pour in the tomatoes and simmer for at least one hour, stirring occasionally.
Fill pasta pot up halfway with water, 1/4 cup white wine and salt; bring to a boil. Add in pasta and cook 10 minutes. Drain and pour into large serving bowl. Pour the sauce over the noodles and toss to coat. Top with basil leaves and freshly grated parmesan cheese.
Season with salt and pepper.
