Ingredients:
1/4 cup whiskey
1 lb. pre-seasoned fajita meat, sliced
1 yellow onion, sliced
1/2 cup mushrooms, chopped
2 Tbsp green chilies, chopped
1/4 tsp chili powder
1/2 cup shredded cheese
10-12 tortillas
2 Tbsp butter
salt to taste
Preparation:
Heat a medium sauce pan over medium heat and add 1 Tbsp butter
Add onions and saute for about 3-4 minutes; add the chili powder and mushrooms
While onions are cooking heat a large sauce pan over medium heat and drizzle some olive oil on the bottom
Add the fajita meat and cook for 7-10 minutes or until brown all over, in the last 3 minutes add the whiskey
Now add the chilies to onions and mushrooms and cook for another minute
Get one tortilla at a time and add 3-4 slices of meat to the tortilla and top with a spoonful of onions, mushrooms, and about a Tbsp of cheese
Roll up the tortilla very tightly and secure with a toothpick
Heat a small pan on low-med heat and add the last Tbsp of butter
Place the tortilla in the pan and turn after about a minute
Serve with chips and salsa
