This summer I’ve had my fair share of popsicles, tubs of ice cream, frappuccinos and tons of ginger ale, but the thing I’ve been wanting or craving the most is a nice fruity drink. Of course, it wouldn’t hurt if it had alcohol in it but being 23 weeks pregnant it’s not going to happen anytime soon.
So to satisfy these hardcore cravings I’ve made a Virgin Blueberry Mojito. In fact I’ve had about 5 different versions in the past week and I finally found “the one” that would do it for me. Summer heat isn’t as brutal this year but being in a pool floating away it would be nice to have a fun mocktail in your hand.
Mojitos are my MOST favorite drink of all time and knowing that I can still indulge in this drink has me pretty darn excited. You can even substitute it with other fruit but in my opinion blueberries are the way to go or the way to a happy stomach. My daughter and niece have even been drinking each version and both agree on this recipe. In fact I actually have to fight off Livi to actually enjoy a whole blueberry mojito for myself.

So grab a drink and let’s toast to the rest of the summer with this virgin blueberry mojito.
In a large cup add blueberries, sugar, mint leaves and lime wedge. Muddle the ingredients and discard the lime wedge.
Pour into a separate cup and top with crushed ice and ginger ale.
Optional: Serve with lime slices.

I have to admit the hardest part about being pregnant in the summer time for me was NOT being able to enjoy a cold alcoholic beverage! Oh and being 100 degrees warmer than everyone else lol!
These mojitos are almost too pretty to drink… almost 😉 I would love to sip on one of these after work!
