Turkey Meatloaf

Well the time has finally come to introduce you to my new site. Lindsay from Purr is the wonderful creator and designer of the new layout. I hope you all enjoy it. I have also created a new category called Out of the Kitchen. This page will have all posts that have nothing to do with recipes and they may include trips, baby details, and etc.
Now catching up on our life. We moved into our new home a week ago. Don’t worry I will post some pictures of the new home soon. Not only did we move into the new home but my mother moved in with us as well for the time being. A couple of years ago she was diagnosed with a brain tumor and the doctors just recently discovered that it is growing back slowly. So she is living with Shaun and I for the next 5 weeks while she goes through Proton Radiation at MD Anderson in Houston. Not only are we happy to cook for her but our dogs are so happy to have their nanny here.
My mother shared this meatloaf recipe on her first night here. Shaun and I aren’t very big meatloaf eaters and we were a little worried about the horse radish in the recipe. I mean come on who just loves to eat horse radish, I sure don’t. Boy, were we amazed at the end dish. I immediately decided that from here on out this would be my go to recipe because it didn’t have ketchup and it was LOADED in flavor. We were also able to eat those for left overs the next day and it was STILL AMAZING.

Turkey Meatloaf
Instructions
Preheat oven to 400 degrees.
Cook the onions and bell pepper over medium heat until tender.
In large bowl combine all of the ingredients including the onions and bell pepper and mix with hands.
Lay out the meat loaf in a large casserole dish and bake for 45 minutes to an hour.
Meat temperature needs to be 165 degrees.
