The last several days I’ve been holed up in my house trying to get rid of my springtime allergies. I wake up sneezing and go to bed sneezing and then there’s the headache that just doesn’t go away.
Thank goodness for Zyrtec and getting a good night’s rest; I’m finally starting to breathe again.
On Monday I re-made this delicious Strawberry Spinach Salad. After retaking the photos and a newly updated post I decided to wait until Earth day to publish it. I mean greens and fruit is just perfect for a day like today.
The first time I ate this salad was almost four years ago while I was celebrating my bachelor party in Fredericksburg, Texas. My sister brought all the ingredients and at first I wasn’t sure about the poppy seed dressing but after a few helpings I was sold. I later made this recipe but with a solo photo and just three lines for the blog did it no justice.
Plus with it being spring and summertime upon us, a good refreshing salad loaded with fresh fruit is the way to replenish your body. Now I’m off to go buy some more Zyrtex so I’m prepared for the attack of the allergies again.

Combine all ingredients in bowl and stir.
Serve immediately
