Today I have Cassie from Bake Your Day showing off this wonderful Steak Salad with Creamy Avocado Vinaigrette Dressing. I have been a follower of her blog for quite some time. Hi there, A Zesty Bite readers! I am Cassie from Bake Your Day and I am thrilled to be here posting for Meagan!

I’m not sure about your corner of the world, but in mine, we experienced a bit of an extended winter this year. This puts just a little wrench of our plans to be spending time outside, enjoying our new deck, planting an herb garden, etc. However, the extra snow and cold weather has not prevented us from firing up the grill!

A couple of weeks ago, we had some friends over for grilled steak, veggies, wine and several fun rounds of dominoes. While I loved the steak hot off of the grill, I was just as excited for the leftovers because I love putting leftover grilled steak on a bed of greens – which is exactly where this recipe comes from. I usually throw on lots of various salad toppings too. For this one, I chose feta, slivered almonds and golden raisins.

I also happen to be a huge avocado fan so I grabbed one and whipped up a quick vinaigrette that was perfect for the steak – creamy and hearty with a little bit of zing from some lemon juice. Perfect for a spring salad!

Steak Salad with Creamy Avocado Vinaigrette

Yield: 1 large salad

Simple steak salad with mixed greens, golden raisins, almonds, feta cheese and a creamy avocado vinaigrette.

Ingredients

for the vinaigrette:

• 1 avocado, pitted and flesh removed
• Juice of 1/2 lime
• 1 Tbs. cilantro
• 1 Tbs. red wine vinegar (more to taste)
• 1/4 cup olive oil
• Salt & Pepper to taste

for the salad

• 2 cups mixed greens (I used a spring mix and spinach leaves)
• 2 ounces feta cheese
• 2 Tbs. golden raisins
• 2 Tbs. roasted slivered almonds
• 3 ounces leftover grilled steak (I warmed mine in a grill pan)

Instructions

Mix the ingredients for the vinaigrette in a jar, and adjust seasonings to taste. Set aside.

In a large bowl, combine the greens, feta, raisins, almonds and steak and mix well. Spread the mixture out onto a large plate and top with the dressing.
