Sriracha is such a funny strange little word. I had to google it like a million times just for this post to make sure I was spelling it correctly. WordPress still doesn’t agree with it.
I took a gamble with this recipe. I love spicy food but pairing it with my favorite veggie… I was a bit optimistic. Praying and hoping that this was going to work out.
Botta bing botta boom!!!
It worked.
Now you will need to like spicy food or at least a little kick in order for you to LOVE this recipe. Don’t worry its not too hot to where you can’t taste the rest of your dish. It’s just the right amount of heat. If you are not sure about the heat level I suggest starting with 1 Tbsp of sriracha to be safe.
Sriracha cauliflower steaks are the perfect side dish to add a little spice to your meal.
Preheat oven to 425 degrees.
Place the cauliflower stem side down and slice it down the center. Cut each of those pieces in the center again leaving the florets attached to the stem. Lay cauliflower steaks down onto a piece of foil.
In a small bowl combine the sriracha and sour cream. Brush it on top of each cauliflower steak.
Bake for 20 minutes and then put it on broil for 3-4 minutes to crisp the top. Remove from oven and season with salt.
*If you are slicing the steaks and the cauliflower breaks into floret pieces that is OK*

The photos are beautiful and the recipe was so simple, I had to give it a try! My cauliflower is in the oven now, so I’ll let you know how it is shortly.
In the meantime, I have a few questions:
1. How thick should the slices of cauliflower be?
2. Should the sauce be spread on only the side facing up or the bottom side as well?

Thanks Kendall! The steaks were about 3/4 to an inch thick. Any thickness will do. Also, I just put the sauce on the top side of the cauliflower. ENJOY!
Mine came out okay. They weren’t as flavorful as I had hoped. Don’t get me wrong, the sauce was VERY flavorful. The problem was the cauliflower was in such huge pieces, the sauce wasn’t able to coat it very well.
I think next time I would cut them much thinner or even just cut them in florets and toss in the sauce to let it really coat them and impart that great flavor.
