A lot can be learned in the kitchen while cooking with family and friends. My kiddos love to put their aprons on and gather around the kitchen counter to see what the latest concoction will be for lunch or dinner. Many times they are hoping for some chocolate dessert or the latest ice cream recipe just waiting to be put in a waffle cone. Their eyes light up when they realized that “mom” is making their favorite dish of the night.

Spaghetti is one of those meals that’s easy to prepare and is ALWAYS a kid favorite when dealing with noodles. Some like it with cheese, while others prefer mounds of meatballs and a good marinara sauce. I decided that it was time to switch up and old classic with this Spinach Pesto Farfalle dish. I understand the desire to keep things simple in the kitchen especially on those busy school weeknights. The best part besides eating this meal is that it only took about 15 minutes to make from start to finish. That leaves plenty of time for enjoying the meal as a family and talking about how the day went around the kitchen table.

We always sit down for every meal as a family with the TV off or turned down in the background to minimize distractions. It’s something that my husband and I have always agreed upon to make sure we give the utmost attention to whoever is at our table.

The next time you have a home cooked meal and it can even start with this Spinach Pesto Farfalle, turn the TV off and stash the iPhones and just talk to your family members. Spinach Pesto Farfalle

Yield: 6+ servings

Prep Time: 3 minutes

Cook Time: 12 minutes

Total Time: 15 minutes

Ingredients

• 4 basil leaves
• 1 cup spinach
• 1/4 teaspoon minced garlic
• 3 tablespoons parmesan cheese
• 1 tablespoon pine nuts
• 1/4 cup plus 1 tablespoon extra virgin olive oil
• pinch of salt
• 4 cups uncooked farfalle pasta

Instructions

Add basil, spinach, garlic, parmesan cheese, pine nuts, olive oil and salt into a food processor.  Pulse until everything is well blended.  Set aside.

Bring a pot of water to boil and then pour in farfalle pasta.  Cook for 10-12 minutes or until tender.  Drain and stir in the pesto.  Top with parmesan cheese.
