Tuesday started off perfect with a playdate to the park and then afterwards we ventured towards a local burger joint. Olivia took a two hour nap, which rarely ever happens anymore. It’s like she woke up and my day went to sh*t.
My husband and I are in the process of potentially building a home this next year to put us closer to his job. We arrive at the builder’s model home just to be told that the plan we fell in love with is not going to work on any lot that would fit our budget. He then proceeds to tell us that we can tweak the current floor plan of the model home we are in. Now when a builder openly suggests that you can ask for things to tweak they don’t really mean it. (It’s their home and its perfect in their eyes.) This is where my mouth got me in trouble because I told him that the kitchen wasn’t big or roomy enough. BAD IDEA Next I told him that the pantry needed to be 3 to 4 times bigger and I got shot down again. Next up on my list was the natural light in the house. There needed to be more windows and once again he told me it wasn’t possible. After be denied 3 times I decided to keep my mouth shut and just leave.
After we get home I’m thinking about my universities football season tickets. We should have received them by now and everyone else that I know got there’s two weeks ago. Totally fretting that something happened and I will not have season tickets.
Next up on my Tuesday night mishaps was todays post. It was supposed to be about cookies. Well it helps if you keep the recipe to write down for your readers instead of throwing it away with other papers. That means I get to make the cookies over again to make sure I get the right amount of ingredients and measurements for all of you.
So now that I vented and I got all of that off my chest…. I get to share a GREAT and easy recipe with you. It’s slow cooker jalapeno popper pulled chicken. This is the type of recipe you need when your day has gone south and you just need some quiet time alone without worrying about dinner.

Looks delicious and I love using the slowcooker but recipes like this make me nervous because my cooker will be on low for about 8 hours. (I plan on getting a new one with a timer eventually….) Would there be a way to adjust this so it would cook that long without burning? Would adding a few more ounces of beer fix that or is this something I should save for a weekend.
You could try turning the slow cooker to high to see if it will cook faster. There are also slow cooker liners at the grocery store and that might help with the burning.
I sure hope your Wednesday is MUCH better – maybe the cookie recipe will magically reappear!

Oh man, I totally feel you. I deleted a recipe’s pictures the other week right before I was going to post it during vacation–not fun. And yesterday, my site was down all day due to Comcast issues.

Do you still taste the beer at all? Hate beer. If so could I use chicken stock and still get the good flavor?
I don’t taste the beer and I would recommend and light beer. You could try substituting chicken stock but maybe do 6 ounces instead of 8 ounces of beer.

I don’t remember the exact servings for this dish but it can definitely feed more than 8.
I love this recipe I’m trying to figure out how much beer I should use when making a double batch? There tend to be too much liquid at the end. I have always used Corona beer. Thanks so much
