In a few short days, the USA team will be competing for the GOLD in Rio. I will be glued to the TV alongside the kids watching swimming, gymnastics, volleyball and track and field events. My all time favorite is gymnastics and you can bet that I won’t miss one single event. I’ve always enjoyed watching that sport from an early age, dreaming that I too would one day compete.
Since we will have our eyes glued to the TV for the next several weeks, I will be prepping some easy meals that our family can enjoy. This past weekend Shaun and I got home from a little weekend away in Belize. We came back home to an empty refrigerator and a need for a quick trip to Market Street to replenish for the week. I grabbed the basket and filled up with Coca-Cola, freshly roasted Hatch chiles, Kellogg’s Rice Krispies and other goodies while the kids ventured off for smoothies.
I love slow cooker meals because I can put all the ingredients needed for the dish into the pot and hours later I’ve got a meal ready to feed my family. In fact, after dinner my husband made a request that I at least make one slow cooker meal a week, so we have leftovers and something for him to take to work.
This Slow Cooker Coca Cola Chicken Sandwich takes less than 5 hours to make and only needs a few minimal ingredients. I paired it wish guacamole, freshly sliced pineapple and red onion rings for the grownups. We had coke to sip alongside the sandwiches as well as chips. My daughter will never be far from a bag of chips from the grocery store.

If I could meet one team member competing for the USA it would be gymnast Simone Biles from Texas. I watched her compete earlier this year and was in awe with everyone else. I’ll be cheering her along with my Coke in hand.
Place the first five ingredients into the slow cooker. Cover with lid and cook on high for 4 hours. Remove lid and using two forks start to pull apart the chicken. Stir and then season generously with salt. Cook on high for an additional 30 minutes.
Broil hamburger buns and then top with pulled chicken, guacamole, pineapple slices and red onion.
