My life has been incredibly busy for the past two weeks. Eleven years ago I pledged a sorority in the fall of my freshman year at Texas Tech. Since moving back to Lubbock I have gotten back involved and even decided to be a co-advisor during recruitment. Apparently I had forgotten the LONG nights, lack of sleep and lots of brain power during this time. I miss Olivia and Shaun during this time but I LOVE the hype of recruitment week and seeing all the fabulous girls going through rush.
With all of recruitment going on that means my family is lacking in the dinner department. It’s slow cooker meals, left overs and eating out for all of us.
It’s nice to know that you can prepare meals ahead of time knowing that your family isn’t going to be knocking down the neighbors door begging for a home cooked meal. I may be busy this week but they are well taken care of with this slow cooker chicken, broccoli and quinoa casserole. If you can’t tell I’m kind of in a slow cooker kick right now and I’m loving it.
Turn slow cooker to low and place quinoa down in the bottom. Top with chicken breasts and then season them with salt and pepper. Add the rest of the ingredients except for the cheese. Cook on low for 5 hours and then add cheese. Stir and cook for an additional 30 minutes. This looks like the ultimate back to school comfort food! I love the traditional chicken and rice casserole but the quinoa makes this even better!
at the risk of sounding like an idiot, I have to ask, are you supposed to cook the chicken first? I’ve never used a slow cooker.
You are fine. For this recipe you can place the chicken in raw. I have seen other slow cooker dishes where you cook chicken before putting it in to crisp up the skin.
Does the quinoa have to be cooked first, or no?

No you don’t. It will cook along with the chicken.
My picky eaters lived this! I just tweaked a couple things: I doubled the garlic, added celery salt, and French fried onions. I will definitely make this again.
Has anyone tried using fresh broccoli? Should it be added near the end? I’m going to try the recipe and place the florets in with the last hour.
You can definitely add fresh broccoli at the end. I would put it in with about 30 minutes left.
Frozen chicken in Slow Cooker? Or thawed? Or does it matter?
