For the past couple of months my family planned a well thought out family vacation at a resort outside of San Antonio. Well, this past weekend we finally had our much needed getaway and were even able to dodge the rain most of the trip. After much sleep, naps, endless amounts of food, a lazy river and tube riding it was time to head back home.
It’s great to plan a summer vacation at the beginning because you feel like you need it but then you want to have something else to look forward to with the family. Thank goodness my husband has a work conference in August because I would go crazy without another pool getaway.
After coming back home I had a huge urge and hankering for seafood. With quite a bit of work to catch up on I knew that I needed something easy, yet flavorful for lunch. Mahi Mahi en Papillotte (in parchment) took less than 15 minutes from start to finish. If you want a complete meal you could throw in some fresh vegetable slices with the fish as well. While the fish was cooking I made some zucchini noodles to go under the roasted mahi mahi instead.
Preheat oven to 400 degrees F.
Brush the top part of the fish with olive oil. Season generously with sea salt and pepper. Add lemon slices to the top along with the coriander seeds. Place the fish in parchment paper and create a pouch with no air.
Roast in the oven for 8-10 minutes or until fish is opaque.
