The first two weeks that I was on the low carb journey… I struggled. Not with cheating or craving certain foods but it’s like my mind went blank on actual meals that I could eat during the day. I’m hoping that in the weeks to come I can show you some of my NEW recipes that have been developed that are low calorie yet still taste great.
Let’s start off with this Low Carb Mashed Cauliflower dish. It’s the perfect side dish to accompany any main entree. If you feel like you are craving carbs or wanting something hearty besides a salad, then this is the place to start. Now on my specific low carb diet, I’m off all milk, certain kinds of butter and any cheese needs to be fat-free. As you will see below this recipe, I’m providing the nutrition facts along with stating what brands I used in the actual recipe. These numbers may vary if you include a different brand or deviate from the original recipe.

Bring a pot of water to boil. Add in the cauliflower and let it cook on med/high heat until tender. Drain the cauliflower and pat dry with paper towels. Transfer to a large bowl and using a handheld mixer start to whip the cauliflower. Beat for 1-2 minutes and then add in butter, sour cream, salt and pepper. Beat again until you reach a smooth consistency. Pour into a serving bowl and top with cheese and bacon. *Season with additional salt and pepper as needed.

This looks like the most delicious mashed cauliflower EVER!! My husband claims he doesn’t like mashed cauliflower, but I’m pretty sure this could get him to change his mind!
If you are doing LCHF however, do not get low fat anything. Full fat is what you need to sustain Ketosis. So while this is “low carb” it would be even lower if not for the low fat aspect. Just sayin
