At this moment in time I feel like my life is in the fast lane. I’m cruising above 70 mph on the highway and passing all things. How is this even possible when summer isn’t even here and I haven’t traveled in a while? One of these days it will all make sense but at this moment I’m still traveling with the pedal to the metal.
This past weekend I worked at an event where I needed to create 400 desserts and 200 drinks for guests. After gathering up my neighborhood friends and a couple other family members we got after the desserts and 7 hours later finally completed them. You would think that I would be done with cooking and baking but I didn’t stop. Remember pedal to the metal.
I got up early Sunday morning to bake some brownies for my local church festival and then decided why not make some homemade sausage. I mean why stop when you are ahead?
It’s a huge family tradition each New Year’s to make homemade sausage. I decided why not make some of my own homemade turkey sausage. Dad, please forgive me. Breakfast sandwiches are always on my mind but I rarely make them. Well, if I’m going full throttle with the homemade sausage, I might as well make me a breakfast sandwich.
For the past month or so, we have been sampling products from Toufayan Bakeries. I’m all about the bagels and wraps while I can’t get my husband to share the pita chips. He insists that they are the best pita chips he has ever tried and we try out a lot. For this breakfast sandwich I decided to toast up some “smart bagels” in the oven. A smart bagel is just a thinner bagel that happens to fit into a healthier lifestyle. They come in four great flavors: plain, everything, wheat and cinnamon raisin but I went with the plain version. Cinnamon raisin is great alone with just some plain butter slathered on top.
This sandwich wouldn’t be complete without avocado, cheese and a runny egg. Feel free to use egg whites as well.

Bring water to boil in a small pot. Add garlic and let it cook for 6 minutes. Strain the garlic from the water and reserve 2 tablespoons.
In a bowl combine turkey, mustard seeds, garlic water, salt and black pepper. Heat up a skillet over medium heat and create 6 patties. Cook for 3-4 minutes on each side.
While patties are cooking heat up another skillet and cook the eggs individually.
Spread cream cheese onto the bottoms of each smart bagel. Smash the avocados into a bowl and then spread on top of the cream cheese. Top with cheese, turkey sausage and egg. Sprinkle with salt and pepper.
