Is it Friday yet?
I woke up this morning to a screaming alarm and all I wanted to do was shut it up and go back to bed. I’m also one of “those” people who loves to sleep past my alarm and I don’t just hit the snooze button; I actually reset the alarm for at least 3-4 minutes at a time. WHY? It is so much easier to just hit the snooze button! You would think by now I would catch on to this red button on my phone….maybe one of these days.
Not only did I not want to wake up this morning, but I put off going to the grocery store this entire past weekend and made Shaun go at like 7pm on a Sunday night. Something is definitely wrong with me. I don’t want to do anything except lay with the dogs and sit on the couch in comfy clothes.
While I was sitting on the couch I finally picked up my Bon Appetit magazine to browse through it. I mean its been sitting there calling out my name for the past couple of days saying, “Read Me.” Now I wish I would have picked it up sooner. I love the latest edition and it has so many great ideas in it. One of the photos in the magazine that caught my attention was a Ham N Cheese Waffle Sandwich.
A lightbulb went off in my head and I thought why haven’t I thought of this sooner. I mean it’s so incredibly easy and I already had a waffle batter recipe so all I needed was ham and cheese.

Ham ‘n’ Cheese Waffle – inspired by Bon Appetit Recipe
Yield: 6 whole waffles
Ingredients:
1 3/4 cup flour
2 Tbsp sugar
1 Tbsp baking powder
2 lg eggs
1 3/4 cup milk
1/2 cup melted butter, cooled
5 slices of ham, chopped
3/4 cup mozzarella cheese, shredded
Preparation:
In a large mixing bowl combine all wet ingredients together. Beat until all wet ingredients are well blended. Slowly add in the flour, sugar and baking powder and stir until everything is coated, but don’t over mix.
Add some of the mixture to a hot greased waffle iron and top with the strips of ham and cheese. Cook until golden brown and the mixture is no longer a wet dough.
You can top with powdered sugar or syrup.
