Seven years ago I graduated from Texas Tech University with a degree in Communications. Communicating is something that I do quite well. My junior and senior years at college were full of speeches in front of large classrooms. I have not given a speech since then until yesterday.
A couple weeks back I had a friend ask me to speak about blogging partnerships to a Women’s Communications Association Group. The speech would need to be 20-25 minutes long. WHAT??? After going back and forth with my nerves I decided to say, “YES.” For the past two weeks I have been on edge, nervous and anxious about my presentation. I probably could have used a glass of wine right before I spoke just to calm my nerves. As you can tell I lived through the speech and I think it will make me more comfortable in the future speaking to large crowds. I mean come on I love to gab and I love the blog.
With that being said lunch and dinner has been scarce around our home. I’ve been working on other things trying to take my mind off the speech and didn’t even consider things for the blog or for dinner.
Today I am showing you an easy and quick recipe. You probably even have the three ingredients in your refrigerator to make this ham and cheese croissant. Olivia had it for lunch and ate two whole sammies. She was definitely a huge fan and they were so easy to make. Sometimes we seem to forget about the easy recipes that can suit the whole family in less than 20 minutes.
Preheat oven to 350 degrees.
Roll out the crescent rolls into 8 pre-cut triangle shapes. Place one slice of meat onto each piece. Then top with cheese and roll up with long width first. Brush each croissant with egg white wash.
Place on non-stick baking pan and bake 12-14 minutes or until golden brown.

I’ll take 10 for breakfast, please. Congrats on the speaking engagement!! I hate public speaking, so I would have been a disaster, but I’m sure you did brilliantly.
