Most people assume that grills are only for burgers, ribs, brisket or pizza. I’m here to prove that theory wrong today by adding some romaine lettuce to the grill. In fact, my opinion is that it’s the only way to truly enjoy this piece of lettuce.
It transforms this leafy green into something magnificent. The taste changes and it is so drool-worthy that you will never want to eat it a different way. It’s weird talking about lettuce like this but I promise you will understand if you’ve ever had it.
This grilled romaine salad with parmesan is the perfect recipe to put together and can be eaten as a main meal or side dish. I could probably put this away by myself and have no guilt about it what so ever. Just saying…
Grilling usually takes 20+ minutes or sometimes even hours for something to be done. I’m usually sweating away or having several beers by the time something is complete. There’s nothing wrong with having a few drinks while cooking, but this dish only takes about 6 minutes and it is done which is a definite plus at times.
Now if you don’t want to fire up the pit just for this recipe feel free to use an indoor griddle or grill pan. Place it over medium heat and let the grill marks appear.
Heat the grill to 350 degrees F.
Oil down the grates to prevent sticking. Lightly brush the romaine lettuce leaves with olive oil on each side. Place down on the grates and cook 2-3 minutes on each side. Remove and place on a plate.
While the romaine is cooking place the red onion down on the grill to sear it on each side. Spread it out over the romaine leaves once done.
Drizzle balsamic vinegar over the leaves and grate the cheese with a vegetable peeler.
Season with salt.
