These Corn Salsa Stuffed Avocados can be the start to your meal or you can enjoy this vegetarian avocado as the main course. It only takes about 10 minutes of prep time and you have one delicious meal.
I’m not sure if Meagan thinks I’m the dirty one in the house or what but I suppose there’s a reason she asked me to write this post. I know it’s been a while since I’ve had the opportunity to write on A Zesty Bite, but this topic was right up my alley. As spring arrived, there’s always a long list of chores to get done outside. One of which is a family favorite of ours.
There’s no way we could pass up the chance to work with Lava Soap to help us clean up after planting our summer garden. With our love of all things food, there’s nothing better than having your own garden to pick from as needed.
I remember as a kid growing up having a similar garden where we were expected to help plant and maintain it all. Even after all these years I still remember having Lava Soap around the house to clean up with every day whether it was from working in the garden or out on the farm.
I’m glad we can share this same experience with our family every year. I’m also glad to know lava soap is still up to the task because with our three kiddos there’s no doubt we will need it. It was even up to the task to wash my hands after cutting up all of the jalapenos. Now if we can keep their dirty hands out of the tomatoes I’ll be happy.
In a bowl combine all of the ingredients except for the avocados.
Using a spoon scoop out the inner part of the avocado leaving a thin layer around the edges. Fill the avocado with the corn salsa and season with additional salt. Plate with the additional avocado filling.
