I’m a little too late to the beach scene. School has started back up and vacations for “most” people are over. Not the case for our family. I’m packing us up and we are headed to Charleston this weekend for a little R & R.
Can we talk about faux tans for a minute?
Sure… I guess I’ll be having it with myself.
I’m WHITE and I don’t tan well. In fact, I burn, peel, and then go back to being extremely white with no color change at all. Tanning salons are not my thing since I’ve had skin cancer on my face. The next best idea is spray tans. I love them when I can find a decent person to do it. The last one I had was three years ago for my wedding.
My problem is once you step in the pool, the tan comes off immediately. It’s like going in all pretty and stuff, and then you come out, and people are like what just happened to that chick.
So the big questions remains spray tan or go pale?
I’m also behind on getting “beach body ready.” This quinoa salad should have been eaten all summer long with some fresh fruits and veggies. Nothing like cramming a summer salad diet one week before the beach, I guess the pizza that I ate with it also doesn’t help.

Cook the brown rice, red lentils and quinoa according to package instructions.
In a large bowl add cucumber, tomatoes, bell pepper, kale and cilantro. In a smaller bowl whisk together the sugar, vinegar, olive oil, lemon juice and salt. Pour over the vegetables and then add in the rice, lentils and quinoa.
Stir the mixture, cover and place in refrigerator.

Hooray for Charleston!! You guys are going to have a blast. I would totally get a spray tan just don’t get the bronzer because you will look like you are glowing. Otherwise, it’s a great deal. Also, this salad…NEED!
I know what you mean about spray tans, I had my first last year, I was so worried I’d look like an ommpa loompa from the movie that I kept asking my kids if I was orange…of course they said yes because they thought it was funny and all of us are used to my pale skin color so I soaked in the bath 5 times with lemon juice and salt and tried rubbing it off. I think I was more uncomfortable with it than anyone else because friends said it looked good and photos showed that it looked good. I guess I wasn’t used to it.
As for that salad, yum, it looks like a very refreshing summer salad, I can’t wait to try it out.
This salad looks perfect. I tan pretty nicely, but barely had any outside time this summer so am white as a ghost. I’m sure my skin appreciates it!! I’ve always wanted to try a spray tan!

Does anyone know if the Costco quinoa salad includes lentils and brown rice? I was surprised to see that in the ingredients. And kale? Or is it just a spin-off of the Costco salad? Looks good either way, but just curious.

You could definitely substitute the two vinegars. I would just taste as you go to make sure you don’t over do it with the red wine vinegar.

This came out pretty good, although I didnt have bell pepper, kale, or cilantro and used white vinegar instead. Also only had quinoa grain.
I love Quinoa salads, but, even though I shop at Costco, I’ve never thought to buy one there. I prefer homemade, anyway, so this one looks perfect! Thanks for the recipe, it looks amazing!

Added garbanzos and Bermuda onion. Also used plain white vinegar instead on white wine vinegar. Such a colorful & deliciously healthy salad!
