The summer heat is taking its toll on me. The kids want to be outside but after 5 minutes I want to call it a day. The sweat is dripping down my face and I’m over on the outdoor furniture trying to play it cool like it’s not affecting me. Oh, but it is. If only I could bring the sprinkler or trampoline inside while I bask in the AC controlled house.
This past week we devoured the Peach Ice Cream, so it was on to something else for the afternoon snacks. Nothing warm because everyone needs a little pick me up to cool off when summer heat hits. Our new choice for an afternoon snack was this Chocolate Cookies and Cream Ice Cream. I say “was” because it only lasted in our house for two days. It looks like I’m going to need to go back to the drawing board for another ice cream recipe to make it through the rest of the summer and this unbearable heat.
Luckily I’ve got vacation planned for us at a waterpark in Grapevine, TX. I’ve needed some time away and this family getaway is just perfect for us. Hopefully, it won’t be too hot but there will be plenty of activities for us inside the resort as well.
In a small pot over low/medium heat add the half and half, cream and sugar. Stir until all sugar has dissolved. Remove from the heat and stir in the vanilla and chocolate syrup. Pour into a bowl and cover tightly. Place in the refrigerator for at least 3 hours.
Pour into ice cream maker and make according to manufacturer instructions. In the last 5 minutes pour in the oreos.
Pour batter into an ice cream container and freezer for an additional 2 hours before serving.

I loooove cookies and cream anything and everything, but I always wish it was chocolate based! Serious chocolate lovers like myself will go head over heels for this ice cream 🙂
