Thanksgiving is just around the corner. Usually I am more pumped up about this holiday but to be completely honest I am ready to start decorating for Christmas.
Yes, I could totally play Christmas tunes on the TV or media player and have NO regrets about doing it. I even started to wrap Christmas presents this past weekend. When this time comes around each year I am so mad at the stores for decorating so early. Now, I am thrilled to go into Target or the grocery store and see the aisles decked out in Christmas decorations. If Shaun would let me I would probably already have everything fully decorated in our house for the holiday. Probably a good thing that he hasn’t brought down our boxes from the attic.
As for right now we have one measly little pumpkin displaying our somewhat Halloween/Thanksgiving cheer. For those of you who are into the Thanksgiving holiday spirit I have made a special pie for you today. I’ve never been a big pie person but I do love chocolate and pecan pies. Today I decided to take a different approach to pies and make one using a cookie recipe. It definitely hit the spot with me.
ENJOY!
Preheat oven to 325 degrees.
In a small bowl combine the flour and both sugars and set aside.
In a large mixer whisk the eggs on high for 3 minutes or until foamy. Now using the paddle attachment slowly add the flour and sugar mixture. Then add the butter and vanilla and mix until everything is creamy. Stir in the pecans, chocolate and butterscotch chips.
Pour the filling into the pie crust very gently.
Bake for 25 minutes uncovered. Now cover the pie with foil and bake for an additional 35 minutes. Finally, remove the foil and place back in the oven for 10-15 minutes. Insert a knife into the center of the pie and if it comes out clean or without a lot of batter then the cookie is done. Remove the pie and let it cool. Before serving you can warm it up or eat it at room temperature with ice cream on top.
*Place a baking sheet underneath the pie just in case the cookie dough runs over – if it does it will not ruin the look of the pie**

Boy, does that look heavenly! What a treat. I am ready to decorate for Xmas too. We’re hosting 14 people at our house and I want my to-do list to get really short, really fast so I can stop worrying. You, on the other hand, will have a little sweet pink bundle to enjoy!
