Somehow, someway I managed to make food this past week and three attempts at whoopie pies. I didn’t let on that I was facing a cold right along with my toddler.
Most mornings consisted of putting together my quick salmon and avocado toasts along with 3 cups of coffee just to help me stay awake until naptime. Naptime just wasn’t for the toddler and we would crawl into my bed and snuggle together until the time was right for us to wake. My husband would get home in the evenings from work and you could bet 9 out 10 times that we were both still in our jammies.
You would think it was the life to lounge around all the time but it was “miserable.” Headaches, runny noses, congestion, fever and bland taste buds were to name a few.
One of those nights I made this broiled salmon for dinner. Talk about a quick, flavorful meal in less than 15 minutes. We are definitely a fish family and any quick meal with easy cleanup comes in handy for a sick household.

Turn the oven to broil.
Place the salmon skin side down on a greased baking pan and drizzle olive oil over the top. Sprinkle the top with salt and then with chili powder. Place on the middle rack and broil for 6 minutes or until salmon is flaky.
Remove and top with grapefruit and avocado.

I never thought of pairing grapefruit with salmon. I think I may try that this weekend as I have a whole bowl of grapefruit sitting on the kitchen counter.
